The only preservative used in caviar is salt.

Are these tins or jars? It describes jars but shows pics of tins.

I think they are in glass jars with metal top.

There was no indication on the packaging that the caviar was pasteurized, however, all four jars were vacuumed sealed. I'm sorry I can't give any better information than that. I can add, though, that all the caviar was delicious!
