Will it be two player? as in can i use one joy con and a person next to me use the other joy con to battle each other and having only one console?

Yes, they show them doing it in this trailer: https://www.youtube.com/watch?v=4s3QJ1BVjCEAnd according to the website, it says "2 players simultaneous," http://www.nintendo.com/games/detail/pokken-tournament-dx-switch#game-details

Will this have cross platform with WiiU?

This hasn't been confirmed, but it's highly unlikely as this version has new modes and pokemon that aren't in the WiiU Version. I think if it had cross play it would have been announced by now.

Does it come the Shadow Mewtwo amiibo card?

No it doesn't however you'll be able to play as Shadow Mewtwo in the game.
